Char Siew Pork Ribs
I love Char Siew and I love Pork Ribs too. So I'm thinking, hey, why not combine the two? Now Char Siew are just pork tenderloin cuts marinated and roasted in char siew sauce ( which itself is a combination of hoi sin sauce, honey and other seasoning ). These tender cuts make char siew more flavoursome. On the other hand, pork ribs tend to be a bit on the tougher side. So to make "char siew pork ribs", first I need to tenderize first, then roast them in char siew marinate. Here's how :
1) Slice some lemons into quarts and set aside.
2) Put pork ribs into a marinating bag and marinate with a light dose of terriyaki sauce. Squeeze lemon juice on the ribs evenly and throw the husk into the bag. Add apple juice and a dose of honey for added sweetness and to balance out the sour from the lemons. Leave in fridge to marinate for 4 hours or overnight. This is to tenderize the meat.
3) Remove ribs and discard the marinating bag. In a new marinating bag, add terriyaki marinate, seasame oil, salt, cumin and chinese 5-spices. Add char siew marinate ( ready made type ) and ensure meat is evenly covered. Add a large dose of honey for added sweetness. Leave in fridge to marinate for another 4 hours.
4) Preheat oven to 180 DegC.
5) Cover a pan or oven tray with some aluminium foil. Lay a grill over it. Then place ribs bone facing down on the grill. Place pork ribs into oven and set timer for 15 mins. When time is up, turn over the pork ribs and roast for another 15 mins.
6) Remove from oven and lightly gaze ribs evenly with honey on all sides. Then put pan or oven tray back into the oven to heat for another 3 mins.
7) Remove and serve with some greens ( lettuce, green peas or shallots ).
If correctly done, the pork ribs should taste like char siew but more tender and delicious. The meat should easily fall off the bones when bite into it. Enjoy! :)
